Doc Anna's Broccoli Soup with Garlic and Olive Oil - Prep 10m, Cook 60m
 

Ingredients:
2 large bunches of broccoli (about 3lbs)
1-2 tbsp olive oil
8 garlic cloves, thinly sliced
2 tsps fresh thyme or marjoram
6 cups chicken or veggie broth
1-2 tbsp lemon juice
salt & pepper to taste

Directions:
Cut the broccoli florets into 1 inch diameter pieces. Discard bottom 2 inches of stem. Peel remaining stems and slice as thinly as possible.

Combine all ingredients except salt & pepper. Bring to simmer, cover, lower heat to slow simmer for 1 hour. Use spoon to break up broccoli.

Season w/ salt & pepper
