Spanish Black Beans & Brown Rice - Prep 5m, Cook 20m

Ingredients:
2 tbsp olive oil

3/4 onion, finely chopped
2 tsp minced garlic

2 cans black beans, drained and rinsed

2 tsp oregano

1 1/2 cup water

2 tsp apple cider vinegar

 

Garnish:  chopped vine ripe tomato and cooked brown rice

Directions:

Heat oil in saucepan on medium heat.  Stir in onion and garlic, cook until tender.  Stir in remaining ingredients and bring to a boil.  Reduce the heat and simmer for about 10 minutes, until the liquid has all but disappeared.  Serve a cup over a cup of cooked brown rice and garnish with chopped tomato.
